Step 1

Peel the potatoes and sweet potatoes and cut into cubes. Chop the garlic.

In a large pot, add 1 cup of water per person. Cook the potatoes and sweet potatoes for 20 minutes.

Step 3

After 20 minutes, add the curry, powdered or grated ginger and the coconut milk. Season with salt & pepper and mix using an immersion blender. Enjoy!
