Step 1
Wash & slice the endives into rounds, discarding the heart. Set the tips of the endives aside for garnish.
Step 2
Peel & slice the shallots into thin rounds.
Step 3
Melt a dab of butter in a pot, over medium heat. Add the shallots & sauté for 1 min.
Step 4
Add the endives.* Stir & cook for another 3 min, stirring. *Check out our tips for this step
Step 5
Add 150 ml of water per serving & the stock cube. Stir, cover & leave to simmer for 15 min, over medium heat.
Step 6
Once the endives are cooked through, add the crème fraîche. Stir to combine & re-season to taste.
Step 7
Blend until you obtain a creamy texture. If needed, add extra water & blend once more.
Step 8
Serve the creamy endive soup in a bowl. Top with the reserved endive tips & re-season to taste. Enjoy !
To reduce bitterness, we suggest adding a drizzle of lemon juice or a pinch of baking soda.
