Stovetop, Frying pan
Step 1
Peel & mince the shallot.
Step 2
Pat the chicken dry with a paper towel. Cube the chicken into bite-sized pieces.
Step 3
Thinly slice the chorizo.
Step 4
Heat a drizzle of oil in a pan over medium-high heat. Sauté the shallot for 1-2 min.
Step 5
Add the chicken to the pan. Season with salt & pepper. Cook, stirring for 5-6 min.
Step 6
In a pot of salted boiling water, cook the pasta according to the package instructions. Reserve 1 ladle of cooking water (per serving) before draining the pasta.
Step 7
Add the chorizo to the pan & cook, stirring for 2-3 min.
Step 8
Stir in the crème fraîche, grated parmesan cheese & reserved cooking water. Simmer for 1 min.
Step 9
Turn off the heat & mix in the cooked pasta until everything is well combined.
Step 10
Serve hot with extra grated parmesan cheese if you wish. Enjoy!
