Stovetop, Frying pan
Step 1
Wash the pepper, remove the seeds & slice thinly.
Step 2
Wash & thinly slice the green onion, separating the dark green leaves form the rest of the onion.
Step 3
Heat a drizzle of oil in a pan over medium-high heat. Season the chicken breast on both sides with half of the cajun seasoning. Add to the pan and cook 4-5 minutes on each side. Set aside on a cutting board.
Step 4
To the same pan, add another drizzle of oil, the lighter slices of green onion & the sliced bell peppers. Season with the remaining cajun seasoning and sauté for 3-4 min on medium heat until softened.
Step 5
Add the tomato paste & cook for 1 min until it browns slightly.
Step 6
Add the pasta & enough water to fully cover the pasta & vegetables. Season with salt & lower to a simmer. Cook the pasta for 8 min, stirring occasionally.
Step 7
Meanwhile, slice the chicken.
Step 8
Add the heavy cream to the pasta. Stir & cook for 1 min until the sauce has thickened. Top with the remaining green onion slices (optional).
Step 9
Add the sliced chicken, serve & enjoy!
