Peas (frozen)

Step 1

Add the peas to a bowl and cover them with boiling water. Set aside for 5 minutes.

Vegetable bouillon (cube)
Couscous

Step 2

In a bowl, add the couscous, crumbled bouillon cube and an equal volume of boiling water (for example: 1 cup couscous + 1 cup water). Cover and let absorb for 5 min.

Sausage (chipolata)

Step 3

Meanwhile, brown the sausages in a skillet with a drizzle of olive oil, cooking for 3 minutes on each side.

Step 4

Fluff the couscous, using a fork.

Step 5

Drain the peas.

Feta cheese (block)
Mint (fresh)
Lemon

Step 6

In a large bowl, add the couscous, peas, crumbled feta and mint. Add the lemon juice, a drizzle of olive oil, and season with salt and pepper. Mix to combine.

Step 7

Serve the couscous with the sausages, topped with a bit more feta and mint. Enjoy!
