Step 1
In a saucepan, add a drizzle of olive oil, the garlic and the grated or finely chopped ginger. Cook for 1 minute.
Step 2
Add 1 cup of water per person and the vegetable bouillon cube. Bring to a boil.
Step 3
Meanwhile, wash the vegetables. Cut the broccoli into florets* and thinly slice the mushrooms. *Check out our tips for this step
Step 4
Once the water is boiling, add the broccoli, mushrooms and coconut milk.
Step 5
Add salt and pepper, mix and cook covered for 6 minutes.
Step 6
Next , add the soy sauce.
Step 7
Serve and enjoy!
