Stovetop, Blender, Pot (small)

Carrots (fresh)

Step 1

Peel & slice the carrots into rounds.

Garlic
Ginger (ground)

Step 2

Heat a drizzle of olive oil in a pan, over medium heat. Add the grated garlic & ginger. Sauté for 30 sec, stirring.

Step 3

Add the carrots & continue cooking for another 5-6 min, stirring occasionally.

Coconut milk
Vegetable bouillon (cube)

Step 4

Add the coconut milk, 100ml of water per serving & the stock cube. Stir, cover & leave to simmer for 20 min, over low heat.

Step 5

Once the carrots are tender, blend until smooth. If needed, add water & blend.

Step 6

Serve the coconut carrot soup in a bowl. Re-season to taste & enjoy !
