Potato

Step 1

Preheat the oven to 200°C. Clean the potatoes & slice into wedges.

Oregano (dried)

Step 2

On a sheet tray lined with parchment paper, add the potatoes & a generous drizzle of olive oil. Season with salt, pepper and oregano. Toss to evenly coat. Roast for 30 min at 200°C.

Chicken breast

Step 3

Heat a drizzle of olive oil in a pan over medium-high heat. Pat the chicken dry with a paper towel. Season all over with salt & pepper. Add the chicken to the pan. Cook, undisturbed for 4-5 min on each side or until fully cooked.

Tomato

Step 4

Meanwhile, wash & slice the tomatoes into thin rounds.

Mozzarella (buffalo)
Balsamic glaze

Step 5

Slice the mozzarella into thin rounds. Add the tomato & mozzarella slices to a plate. Season with salt & pepper. Top with a drizzle of balsamic glaze & olive oil.

Basil (fresh)

Step 6

Once cooked, add the potatoes & chicken to the plate. Season with salt and pepper to taste. Garnish with fresh basil leaves if you have some. Enjoy!
