Make sure you have...
Stovetop, Frying pan
Step 1
Cook or re-hydrate the noodles according to package instructions. Drain & rinse the noodles in cold water to stop the cooking. Set aside.
Step 2
Heat a drizzle of olive oil in a pan over medium-high heat. Add the chicken to the pan & season with salt & pepper. Sear 4-5 min on each side. Transfer the cooked chicken to a cutting board to rest.
Step 3
Wash & slice the lettuce into shreds.
Step 4
Rinse & thinly slice the scallions.
Step 5
Prepare the sauce. In a small bowl, combine : sweet chili sauce & rice vinegar. Add a few drops per serving of toasted sesame oil, if you have some.
Step 6
Slice the chicken into strips.
Step 7
Serve the noodles in a dish with the shredded lettuce, scallions & chili sauce. Toss well to evenly coat. Arrange the sliced chicken on top with more sauce & crushed peanuts. Enjoy !
