Step 1
Peel the potatoes and cut into small chunks. Cook for 15 minutes in a pot of salted boiling water.
Step 2
Tip: For a golden crust, dip the chicken breasts in flour before cooking.
Step 3
Add some butter to a frying pan, about 20g of butter per person.
Step 4
Add the chicken and cook on one side for 2 minutes on high heat. Season with salt & pepper.
Step 5
Flip the chicken and cook on medium heat for an additional 8 minutes, or until cooked throughout. Keep warm on low heat.
Step 6
Once the potatoes are cooked (they should be fork tender), drain and add to a bowl.
Step 7
Season with salt & pepper. Optional: add a pinch of ground nutmeg.
Step 8
Add the milk and the rest of the butter (about 1 tablespoon per portion), salt & pepper. Mash to desired consistency.
Step 9
Serve the chicken with the mashed potatoes. Drizzle some lemon juice on the chicken and enjoy!
