Celery root

Step 1

Remove the rind and chop the celery into pieces. Then rince it with clear water.

In a large pot, add a knob of butter (or olive oil) and cook the onions for 2 minutes.

Add the celery and cook for 5 more minutes until lightly golden.

Vegetable bouillon (cube)

Add enough water to cover the celery and add the vegetable stock, salt and pepper.

Cover and simmer for 15 minutes.

The celery should be tender and easily mashed, continue to cook for a few more minutes if it's not.

Heavy cream

Step 8

Once the celery is cooked, add the cream and blend together. Season to taste.

Step 9

Add a bit of water if the consistancy is too thick.

Serve with some crushed nuts (optional) and the crumbled roquefort. Enjoy!
