Stovetop, Blender
Step 1
Finely chop the onions.
Step 2
In a saucepan, add a drizzle of olive oil and the turmeric. Heat for 1 minute over medium-low heat, then add the onions.

Sauté over medium heat for 2 minutes.

Meanwhile, wash and trim the cauliflower.
Step 5
Using a knife, remove the stem.
Step 6
Separate the florets and chop the stem.
Step 7
Add all of the cauliflower pieces to the pot and sauté for 2 minutes.
Step 8
Add enough water to cover the cauliflower, season with salt and pepper, then cover and simmer for 15 minutes.
Step 9
When the cauliflower is tender, add the coconut milk and puree until smooth using an immersion blender or blender.
Step 10
If the soup is too thick, add a bit of water and adjust seasoning as necessary.
Step 11
Serve, it's ready!
