Yellow onion

Step 1

Peel, then thinly slice the onions.

Cauliflower (fresh)

Step 2

Wash, then cut the cauliflower into bite-sized florets.

Curry powder

Step 3

Heat a drizzle of olive oil in a pot, over medium heat. Add the onions & curry powder. Cook for 2-3 min.

Vegetable bouillon (cube)

Step 4

Add the cauliflower, veggie stock cube, if you have some & 150 ml of water per person. Season with salt & pepper. Bring to a boil, then cover & let it simmer for 15-20 min, over low heat.

Coconut milk (full fat)

Step 5

Once cooked through, add the coconut milk. Blend, until smooth. If necessary, add a splash of water & blend again.

Step 6

Serve the Cauliflower & Coconut Soup in a bowl. Season to taste & enjoy !
