Broccoli (fresh)

Step 1

Preheat oven to 200°C/390°F. Cut the broccoli into florets and dice the stem.

Place the broccoli in a pot and cover with water. Add salt, cover and cook over medium heat for 15 minutes.

Parmesan (grated)

Step 3

Meanwhile, make small piles of grated parmesan on a parchment-lined baking sheet. Sprinkle with pepper and bake for about 5 minutes at 200°C/390°F. Check frequently and remove from oven when golden brown.

Heavy cream

Step 4

After 15 minutes, purée the soup using an immersion blender or blender. Add the cream and mix. Add a bit of water if the soup is too thick.

Step 5

Serve the soup, topped with the parmesan crisps!
