Oven, Aluminum foil
Step 1
Preheat the oven to 210°C. Wash & slice potatoes into wedges.
Step 2
Pat dry the chicken thighs with a paper towel.
Step 3
Line a sheet tray with foil. Arrange the potato wedges on one side of the tray. Drizzle with olive oil. Season with salt & pepper.
Step 4
Add the chicken thighs, skin-side up, on the other side of the tray. Season with salt & pepper.
Step 5
Using a brush or spoon, spread bbq sauce over each chicken thigh.
Step 6
Roast for 25 min at 210°C.
Step 7
Remove the sheet tray from the oven. Add the green beans over the potatoes. Season with salt, pepper & a drizzle of oil. Option to brush the chicken with another layer of bbq sauce for extra flavor !
Step 8
Roast for 20-25 min or until the chicken is fully cooked (internal temp of 70°C).
Step 9
Serve the chicken, potato wedges & green beans with extra bbq sauce if desired. Enjoy!
