Oven
Step 1
Preheat the oven to 200°C. Peel the carrots then cut them into wedges.
Step 2
Peel the potatoes* then cut them into 4 or 6 depending on size. *Check out our tips for this step

Peel the onions and cut them into 4.
Step 4
On a baking tray or in a baking dish, add the vegetables, a drizzle of olive oil, salt and pepper then mix well. Bake for 20 minutes at 200°C.
Step 5
Meanwhile prepare the sauce: mix the balsamic vinegar with the honey.
Step 6
Place the filet mignon on a plate and pour in the sauce. Soak it well with all the sauce. Then leave to marinate in the fridge until the vegetables are cooked.
Step 7
Once the 20 minutes of cooking have elapsed, create a space then add the filet mignon. Pour the remaining sauce over it. Add a splash of water (around 20ml of water per person). Add salt and pepper. Bake again for 30 minutes at 200°C.
Step 8
Remove the dish from the oven. Cut the filet mignon into slices and serve. It's ready !
