Make sure you have...
Oven
Step 1
Preheat the oven to 200°C. Peel & cut the carrots into wedges.
Step 2
Peel & cut the potatoes* into 4 or 6, depending on their size. *Check out our tips for this step
Step 3
Peel & cut the onions in 4.
Step 4
On a baking tray or in a baking dish, add the vegetables. Drizzle over with olive oil, salt & pepper. Mix well & roast for 30 min at 200°C.
Step 5
Meanwhile, prepare the glaze, In a bowl, combine : the balsamic vinegar & honey.
Step 6
In a shallow dish, add the pork tenderloin & pour the glaze over. Soak it well & leave to marinate in the fridge until the veggies are cooked.
Step 7
After 30 min, remove the dish from the oven & add the marinated pork tenderloin. Pour the remaining marinade & a splash of water on top of it (approx 20ml). Season with salt & pepper & roast for another 20 min at 200°C.
Step 8
Remove the dish from the oven, slice the pork tenderloin & serve it with the roasted veggies. Enjoy !
