Air fryer.
Recipe

Step 1
Wash & cut the potatoes into bite-sized pieces.

Step 2
Wash & slice the zucchini into half-moons.
Step 3
Add the sliced zucchini & potato wedges to the air fryer basket with the rack. Season with salt, pepper & a drizzle of olive oil. Air fry for 15-20 minutes at 200°C.

Step 4
Meanwhile, rinse & chop the chives if you have some.


Step 5
Prepare the yogurt sauce. In a bowl, add: the yogurt, chopped chives, lemon zest & juice. Season with salt & pepper. Add a drizzle of olive oil, then mix. Set aside.

Step 6
After 20 min, remove the veggies from the air fryer. Add the salmon to the air fryer basket & season with salt, pepper & a drizzle of olive oil. Continue cooking in the air fryer for 6-8 min at 200°C.
Step 7
Once the veggies & salmon are cooked through, take them out of the air fryer.
Step 8
Serve the salmon on a plate with the potatoes, zucchini & lemon yogurt sauce. Re-season to taste. Enjoy!
