Air Fryer Salmon & Lemon Skewers with Couscous

Step 1
If needed, remove the skin from the salmon & cut it into pieces.

Step 2
Wash & slice the lemon into rounds.
Step 3
On a skewer*, add a piece of salmon followed by a lemon slice folded in half. Repeat this process 2-3 times, depending on the length of your skewer. Repeat as many times as needed.
Step 4
Place the skewers in the air fryer basket with the rack. Air fry for 8 to 10 minutes at 200°C, flipping them halfway through.

Step 5
Meanwhile, rehydrate the vegetable stock cube in 250 ml of boiling water per person.

Step 6
In a bowl, mix : the couscous with salt, pepper & a drizzle of olive oil. Pour the same volume of hot vegetable stock on the couscous. Cover & leave to soak for 5 min. Fluff the couscous with a fork & set aside.
Step 7
Once the salmon is cooked through & golden, remove the skewers from the air fryer. Serve them on a plate with the couscous. Re-season to taste & enjoy!
If you're using wooden skewers, soak them in water for 30 min before using to prevent burning.
