Air fryer
Step 1
Wash and cut the potatoes into small cubes.
Step 2
Wash and cut the cherry tomatoes in half.
Step 3
In the air fryer basket with the rack, add the potatoes, cherry tomatoes, grated garlic, and a drizzle of olive oil. Season with salt and pepper, and stir. Cook in the air fryer for 15 to 20 minutes at 200°C, stirring halfway through.
Step 4
After 20 minutes, remove the Italian-style potatoes from the air fryer. Add the Parmesan shavings and continue cooking for 10 minutes at 200°C.
Step 5
Meanwhile, add the cod to the air fryer basket with the rack. Brush it with a little olive oil and season with salt and pepper. Cook it in the air fryer for 8 to 10 minutes at 200°C.
Step 6
Once the cod and vegetables are golden brown and tender, remove them from the air fryer.
Step 7
Serve the cod and Italian-style potatoes on a plate. Re-season to taste and add a few basil leaves, if you have any. It's ready!
