Creamy zucchini with pesto & a crumbly parmesan topping - yummm !
Oven, Thermomix, Baking dish
Step 1
Preheat the oven to 180°C. Wash & dice the zucchini.
Step 2
Prepare the crumble. In the Thermomix bowl, add : the flour, grated parmesan & diced softened butter. Season with salt & pepper & mix for 15 speed 4.
Step 3
Butter an oven-proof dish & add the zucchini.
Step 4
Add the pesto & stir to combine. Season with salt & pepper & add the crumbled goat's cheese on top. Top with the crumble & bake for 40 min at 180°C.
Step 5
Once golden on top & cooked through, remove the crumble from the oven & serve with a side of green salad. Enjoy !
