Peeler, Pot (small), Stovetop

Peas (frozen)

Step 1

In a shallow dish, add the frozen peas. Pour boiling water over them to cover & set aside for 3-4 min before draining.

Zucchini

Step 2

Wash & slice the zucchini into thin strips, using a peeler.

Cilantro (fresh)

Step 3

Wash & finely mince the cilantro.

Lemon

Step 4

Prepare the dressing. In a bowl, combine : a tablespoon of olive oil per person, cilantro & lemon zest & juice. Season to taste.

Arugula
Feta cheese (block)

Step 5

Serve the arugula, zucchini, peas & crumbled feta. Pour the dressing over & top with cilantro leaves, if you have some left. Enjoy !
