Stovetop, Grater, Colander, Frying pan, Whisk
Step 1
Wash & cut the ends of the zucchini. Grate them.
Step 2
Add the grated zucchini into a colander & sprinkle generously with salt. Mix & press with the back of a spoon. Set aside to drain.
Step 3
Meanwhile, if needed, grate the parmesan cheese.
Step 4
Rinse & chop the chives, if you have some.
Step 5
Crack the eggs in a bowl & whisk them.
Step 6
Drain the zucchini by pressing small portions down with the back of a spoon. You can also use a clean cloth or cheese-cloth.
Step 7
In a large mixing bowl, add : the drained zucchini , grated garlic, chopped chives, flour & breadcrumbs. Season with pepper & spices to your liking - e.g: . cumin, nutmeg or chili powder. Mix to combine.
Step 8
Pour le whisked eggs on top & mix to combine.
Step 9
Heat a drizzle of olive oil in a pan over medium heat. Add 2 spoonfuls of the mixture in the center of the pan & spread it out into a pancake shape of approx. 1 cm thickness. Cook for 3-4 minutes on each side.
Step 10
Serve the zucchini pancakes with a side of green salad seasoned to taste. Enjoy !
