Zucchini

Step 1

Wash the zucchini and slice into ribbons using a vegetable peeler. When you start to see the seeds, rotate the zucchini 1/4 and do all 4 sides until you have just a thin center left. (chop and save for another meal!)

Corn (canned)
Zucchini
Lemon

Step 2

Strain the corn. Add to a large bowl with the zucchini (optional: chopped basil) and lemon zest.

Mix the lemon juice, 1 tsp olive oil, salt and pepper. Add to the vegetables, toss together.

Feta (marinated)

Step 4

Add the feta, mix well and serve!
