Zucchini

Step 1

Wash the zucchini. Slice them in half lengthwise & then into half moons.

Garlic
Curry powder

Step 2

Heat a drizzle of olive oil in a frying pan over high heat. Add the zucchini, curry and garlic. Sauté for 3 minutes, stirring occasionally. Optional: add herbes de Provence or thyme.

Peas (frozen)
Coconut milk

Step 3

Add in the peas & coconut milk. Season with salt & pepper and leave to simmer on medium heat for 5 minutes.

Rice noodles

Step 4

In the meantime, in a pot of salted boiling water, cook the rice noodles according to package instructions. Once cooked through, drain the noodles.

Step 5

Add the noodles to the pan with the vegetables and stir to combine. Season according to taste & enjoy !
