Zucchini

Step 1

Wash the zucchini and cut into thing, long strips using a vegetable peeler.

Step 2

When you reach the seeds, turn the zucchini 45° and do the same on all 4 sides. (Save the center to use later for a stir fry to serve with pasta for example!)

Hazelnuts

Step 3

Optional: Crush some hazelnuts or pine nuts.

Goat cheese
Hazelnuts

Step 4

In a bowl, mix the goat cheese, crushed hazelnuts or pine nuts, and 1 tablespoon of olive oil (per portion). Season with salt & pepper.

Zucchini
Salad (lamb's lettuce-arugula mix)
Honey
Mint (fresh)
Flour tortilla (medium)

Step 5

Spread the goat cheese mixture onto the wrap, add some mint (or cilantro), the zucchini strips, a drizzle of honey and lettuce. Fold in the edges and roll up. Cut in half and enjoy!

Step 6

Cut the tortilla in half. Servez!
