Step 1
Preheat the oven to 220°C. Quarter the onions and separate the layers into petals.

Cut the zucchini into 2-inch chunks.
Step 3
Slide a piece of zucchini, a cherry tomato, and a piece of onion onto a skewer and repeat with the remaining vegetables.* *Check out our tips for this step
Step 4
Place the skewers on a parchment-lined baking sheet. Season with salt and pepper and drizzle with olive oil. Add a pinch of herbes de Provence and bake for 25 minutes at 220°C.
Step 5
Meanwhile, bring some water to a boil. Place the couscous in a heatproof bowl and pour in an equal volume of boiling water (e.g., 1 c couscous + 1 c water). Cover and let absorb.
Step 6
Meanwhile, remove the skewers from the oven.
Step 7
Fluff the couscous with a fork and serve with the veggie skewers. Add a spoonful of Greek yogurt and season to taste, then serve!
If you're using wooden skewers, soak them in water for 30 min before grilling to prevent burning.
