Ingredients

Utensils

Stovetop, Pot (small) and Frying pan.

Recipe

Carrots (fresh)

Step 1

Peel & grate the carrots.

Yellow onion

Step 2

Peel & fine dice the onions.

Garlic

Step 3

Heat a drizzle of olive oil in a pan, over medium heat. Add the onions, grated garlic & carrots. Sauté for 2-3 min, stirring.

Tomato sauce (basil)

Step 4

Add the tomato sauce. Season with salt & pepper & mix well. Cover, lower the heat & simmer for 15 min, over low heat.

Lentils (cooked)

Step 5

After 15 min, add the lentils to the pan. Mix well & continue cooking for 4 min, stirring.

Pasta (spaghetti)

Step 6

Meanwhile, in a pot of salted boiling water, cook the pasta according to package instructions. When the pasta is done, set aside a small ladle of cooking water, then drain the pasta.

Step 7

Off the heat, mix the spaghetti with the veggie bolognese. If needed, add a small drizzle of reserved cooking water.

Step 8

Serve the spaghetti & veggie bolognese on a plate. Top with a few basil leaves, if you have any. Re-season to taste & enjoy!
