Stovetop, Pot (small), Grater, Frying pan, Colander
Step 1
Peel & grate the carrots - alternatively, you can slice them very thinly.
Step 2
Peel & small dice the onions.
Step 3
Heat a drizzle of olive oil in a pan, over medium heat. Add the onions, grated garlic & grated carrots. Sauté for 2-3 min, stirring.
Step 4
Add the tomato sauce & stir to combine. If needed, add a splash of water & stir. Season with salt & pepper. Cover & leave to simmer for 5 min, over low heat.
Step 5
Meanwhile, in a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, drain the pasts & keep warm.
Step 6
After 15 minutes, add the cooked lentils to the pan. Stir to combine & continue cooking for another 4 min, stirring.
Step 7
Add the spaghetti to the pan with the sauce & stir well to evenly coat.
Step 8
Serve the veggie spaghetti bolognese in a plate. Re-season to taste & enjoy !
