A hearty classic for vegetarians, or those who want to go meat-free for the evening.
Oven, Baking dish
Step 1
Wash, then slice the mushrooms.
Step 2
Wash, then slice the zucchini into half rounds.
Step 3
Slice the mozzarella.
Step 4
Heat a drizzle of olive oil in a pan, over medium heat. Add the zucchini & mushrooms. Season with salt & pepper. Cook for 4-5 min while stirring.
Step 5
Preheat the oven to 180°C. In a baking dish (we used a 32 x 20 cm dish here), add a first layer of tomato sauce, followed by a layer of raw lasagna sheets, the sautéed veggies & mozzarella slices. Repeat for another 2 layers with the remaining ingredients. Top with a layer of mozzarella slices & tomato sauce.
Step 6
Make sure the noodles are covered with the tomato sauce. Season with the 'herbes de Provence' & pepper. Bake for 30-35 min at 180°C.
Step 7
Once the cheese has melted & the top is golden brown, remove the dish from the oven. Serve the lasagna with a side of green salad, season to taste. Enjoy !
