Eggplant

Step 1

Preheat the oven the 180°C. Wash & cut the eggplants into thin rounds.

Zucchini

Step 2

Wash & cut the zucchinis into thin rounds.

Tomato

Step 3

Wash & cut the tomatoes into thin rounds.

Yellow onion

Step 4

Peel & cut the onions into thin rounds.

Garlic

Step 5

Grease a round oven-safe dish with butter or olive oil. Add grated garlic to the base of the dish.

Step 6

Place the vegetables in an upright position by alternating in a circular pattern.

Herbes de Provence

Step 7

Drizzle with olive oil and sprinkle with 'herbes de Provence', salt & pepper. Bake at 180°C for 50 minutes.

Step 8

Remove from oven and enjoy!
