Eggplant

Step 1

Preheat the oven the 180°C. Chop the ends off the eggplant and then cut into thin round slices.

Zucchini

Step 2

Cut the ends off the zucchini and cut into thin round slices.

Tomato

Step 3

Cut the tomatoes into thin slices.

Yellow onion

Step 4

Remove the outer layers of the onion and then cut into thin round slices.

Garlic

Step 5

Grease a round oven-safe dish with butter or olive oil. Add grated garlic to the base of the dish.

Step 6

Place the vegetables in an upright position by alternating in a circular pattern.

Thyme (dried)

Step 7

Drizzle with olive oil and sprinkle with thyme, salt & pepper. Bake at 180°C for 50 minutes.

Step 8

Remove from oven and enjoy!
