Brown rice (long grain)

Step 1

In a pot of salted boiling water, cook the rice according to package instructions.

Tofu (firm)

Step 2

Meanwhile, dice the tofu.

Soy sauce

Step 3

In a bowl, add : the diced tofu & soy sauce. Add grated garlic & ginger (optional) et stir to evenly coat. Set aside for 10-12 min.

Cucumber

Step 4

Wash & slice the cucumber into thin rounds.

Avocado

Step 5

Peel & slice the avocado into thin strips.

Step 6

Once cooked through, drain the rice. Serve the rice in shallow dishes or bowls with a drizzle of the tofu marinade. Stir to evenly coat.

Step 7

Top with the avocado slices, cucumber rounds & marinated tofu.

Coconut Yogurt (plain)

Step 8

Drizzle over with coconut yogurt. Top with fresh coriander leaves & sesame seeds, if you have some. Re-season to taste & enjoy !
