Stovetop, Frying pan, Pot (small), Grater
Step 1
If needed, defrost your salmon. Heat a drizzle of olive oil in a pan, over medium heat. Add the salmon & sauté for 6 min, skin side down.
Step 2
Meanwhile, in a pot of salted boiling water, cook the pasta according to package instructions (approx 2-3 min). Once cooked through, drain & set the pasta aside.
Step 3
Flip the salmon & sauté for 1 min on each side. Remove from the heat & set aside.
Step 4
Drain & roughly chop the sun-dried tomatoes.
Step 5
In the same pan, add the grated garlic & sauté for 30 sec, over medium heat.
Step 6
Add sun-dried tomatoes and 2 tablespoons of water per serving. Stir, then add spinach & cook until wilted.
Step 7
Add the cream & simmer for 1 to 2 minutes, over low heat. Season with salt & pepper. Add the drained pasta & stir to evenly coat.
Step 8
Add the salmon to the pan & coat with the sauce.
Step 9
Serve the creamy pasta with the salmon. Re-season to taste & enjoy !
