Step 1

Using a jam jar lid or a large glass, cut circles out of the bread - the same size as the tournedos.

Butter (unsalted)
White bread (sliced)

Step 2

In a hot frying pan, melt half the butter and brown the bread for 1 minute on each side.

Beef (tenderloin steak)

Step 3

Add the rest of the butter to the pan and cook the tournedos for 2 minutes (rare) on each side on high heat. Season with salt and pepper towards the end of cooking.

Step 4

On a plate, serve the salad seasoned with a dressing of your choice, place the bread on the plate, adding the tournedos on top and placing a slice of fois gras on top of the beef. Season and serve!
