Chicken breast

Step 1

Heat a drizzle of olive oil in a pan, over medium heat. Add the chicken & season with salt & pepper. Cook for 4-5 min on each side.

Pasta (tagliatelle dry)

Step 2

In a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, reserve a small ladle of cooking water, then drain the pasta.

Step 3

Check the chicken for doneness. Once golden brown, set aside & keep warm.

Garlic
Cherry tomatoes
Tomato paste
Heavy cream
Black olives (pitted)

Step 4

In the same pan, heat a drizzle of olive oil. Add the grated garlic, cherry tomatoes, tomato paste, crème fraîche & olives.

Step 5

Pour the reserved pasta cooking water into the pan & stir to combine. Season with salt & pepper. Cover & leave to simmer for 4-5 min, over low heat.

Step 6

Check the tomatoes for doneness, then add the drained pasta to the pan. Mix well to evenly coat.

Basil (fresh)

Step 7

Serve the tomato & olive tagliatelle with the grilled chicken. Re-season to taste & top with fresh basil, if you have some. Enjoy !
