Stovetop, Frying pan
Step 1
Heat a drizzle of olive oil in a pan, over high heat. Add the cherry tomatoes & sauté for 3 minutes. Cover and continue cooking for another 5 min, over low heat. Set aside.
Step 2
Meanwhile, in a bowl, crack the eggs. Season with salt, pepper & 'herbes de Provence'. Whisk the eggs with a fork or a whisk.
Step 3
In the same pan, heat a drizzle of olive oil, over medium heat. Add the egg mix & cook for 1-2 min. To help cook the omelette faster, gently break the bottom of the omelette using a spatula.
Step 4
Une the bottom of the omelette is nicely golden, remove from the heat. Serve the omelette topped with pieces of fresh goat's cheese & the confit tomatoes & with a side of salad. Re-season to taste & enjoy !
