Step 1
Boil some water. In a bowl, add the couscous. Mix in some salt, pepper & a drizzle of olive oil. Add the raisins & pour the same volume of couscous in boiling water over top. Cover & set aside for 5 min. Fluff the couscous with a fork & set aside to cool down.
Step 2
Meanwhile, wash & dice the cucumber.
Step 3
Toast the slivered almonds in dry pan over medium heat for a couple of minutes, until lightly golden.
Step 4
If you have some, roughly chop the parsley.
Step 5
Prepare the dressing. In a bowl, mix : the lemon zest & juice with 1 tablespoon of olive oile per person. Season with salt & pepper.
Step 6
Once the couscous has cooled down, add it to a large bowl or plate with the cucumber toasted almonds & parsley*. Pour le dressing on top & stir to combine. Enjoy ! Check out our tips for this step
