Step 1
Preheat the oven to 180°C. Put the sliced bread in a bowl and pour on the milk. Set aside, so the bread can soak up the milk.
Step 2
Wash and remove the top of the tomatoes (approx. 1cm) and remove the flesh with a spoon. Set the flesh aside.
Step 3
Peel and finely chop the shallot & garlic. Chop the parsley.
Step 4
In a large bowl, add the sausage meat, milk-soaked bread, garlic, parsley, shallot. Season and mix with your hands.
Step 5
In a baking dish, add the rice, 180ml of water per person & the reserved tomato flesh. Season with salt, pepper & stir well.* *Check out our tips for this step
Step 6
Stuff the tomatoes with the sausage mixture & place them into the oven-proof dish. Add the tomato tops back on top of the tomatoes & bake for 45 minutes at 180°C.
Step 7
Once the tomatoes are cooked, remove the dish from the oven & sprinkle over with parsley, if you have some left. Enjoy !
You can also cook the rice separately, in a pot of salted boiling water. Drain once cooked through & serve with the stuffed tomatoes.
