Step 1
Wash the strawberries and remove the stems. Cut them in half or in quarters according to their size.
Step 2
Place in a bowl and add half a tablespoon of sugar per serving and mix. Leave to rest in a cool place.
Step 3
In a bowl, whisk egg, milk and 1 tbsp sugar per serving with a fork.
Step 4
Place the brioche slices in the milk/egg mixture and let them soak generously on each side.
Step 5
Heat a pan with a dab of butter. Place the brioche in the pan and cook for 2 minutes on each side over medium heat.
Step 6
Sprinkle the remaining sugar on top of the brioche slices.
Step 7
Turn them over and repeat the process.
Step 8
Turn them over one last time so that each slice is well caramelized.
Step 9
Arrange the brioche slices on a plate.
Step 10
Using the same pan, and add a dab of butter. Pour in the strawberries and cook for 3 minutes over low heat to obtain a light compote.
Step 11
Place the compote on the warm slices of brioche and enjoy!
