Quinoa (cooked)

Step 1

Cook the quinoa according to package instructions.

Whole grain mustard
Lemon

Meanwhile, prepare your vinaigrette: In a small bowl, combine old-fashioned mustard, lemon juice & 1 tbsp of olive oil per person. Season with salt, pepper & mix it all together.

Beef (steak)

Step 3

Heat a drizzle of oil in a pan over medium-high heat. Pat the steak dry with a paper towel. Season all over with salt & pepper. Sear the steak for 2 min on each side for rare doneness.

Tzatziki
Arugula

Step 4

Serve the steak over bed of quinoa with arugula & a dollop of tzatziki.

Step 5

Top with the mustard vinaigrette. It's ready!
