Bacon

Step 1

Preheat the oven to 180°C. In a hot pan, add the bacon strips & sauté for 2 min, over high heat. Once golden & crispy, remove the bacon from the pan & set aside on a paper towel-lined plate.

Yellow onion

Step 2

Meanwhile, feel & finely mince the onions.

Red kuri squash (potimarron)

Step 3

Peel the squash, if you wish & small dice it.

Hazelnuts

Step 4

Roughly chop the hazelnuts. Set aside.

Step 5

Heat a drizzle of olive oil in a pan, over medium heat. Add the onions & sauté for 2-3 min.

Thyme (dried)

Step 6

Add the diced squash & thyme. Season with salt & pepper. Continue cooking for another 8-10 min.

Sunflower oil

Step 7

Meanwhile prepare the loaf batter. In a mixing bowl add : the eggs & oil. Season with salt & pepper & whisk to combine.

Flour (all-purpose)
Hazelnuts (ground)
Baking powder

Step 8

Add : the flour, ground hazelnuts (if you have some), baking powder & chopped hazelnuts (set some hazelnuts aside to decorate the loaf). Whisk to combine.

Gorgonzola

Step 9

Add : the crispy bacon cut into bits, la fried squash & cut-up gorgonzola cheese. Stir to combine, using a spatula.

Step 10

Grease a loaf tin (we used a 29 x 10 cm dish here) with butter. Pour the cake batter into the tin & top with the reserved chopped hazelnuts. Bake for 50 min at 180°C.

Step 11

Once the loaf is golden, plant the tip of a knife into the center of the loaf. If it comes out clean, the loaf is ready, otherwise, bake it for another 2-3 min. Enjoy the Squash, Bacon & Gorgonzola Loaf with a green salad !
