Spinach (frozen)

Step 1

Preheat the oven to 180°C. Defrost the spinach according to package instructions. Once defrosted, make sure to squeeze out all extra liquid.

Flour (all-purpose)
Baking powder

Step 2

Prepare the loaf batter. In a large bowl, combine : the flour & baking powder.

Egg

Step 3

Crack the eggs into the bowl. Season with salt & pepper. Whisk to combine.

Olive oil
Milk (whole)

Step 4

Pour in the olive oil & stir to combine. Add the milk in & stir until well combined.

Shredded cheese
Feta cheese (block)

Step 5

Incorporate : the grated cheese, crumbled feta (set some aside to decorate the loaf before baking) & the drained spinach. Gently stir, using a spatula.

Step 6

Grease a loaf pan (we used a 29 x 10 cm dish here) & add a strip of parchment paper to line the bottom. Pour in the loaf batter & garnish on top with the reserved crumbled feta. Bake for 50 min at 180°C.

Step 7

Once the loaf is golden, plant the tip of a knife into the center of the loaf. If it comes out clean, the loaf is ready, otherwise, bake it for another 2-3 min. Serve it for ‘apéro’ or as a main with a side of green salad. Enjoy !
