Step 1
Preheat the oven to 180°C. Defrost the spinach according to package instructions. Once defrosted, make sure to throughly squeeze out all the extra liquid.
Step 2
Meanwhile, prepare the loaf batter. In a mixing bowl, add : the flour & baking powder. Whisk to combine.
Step 3
Add the eggs. Season with salt & pepper. Whisk to combine.
Step 4
Add the olive oil & whisk to combine. Add the milk & whisk once more, until the batter is smooth.
Step 5
Add : the grated cheese, crumbled feta (set some aside for decorating) & the drained spinach. Stir to combine, using a spatula.
Step 6
Grease a loaf tin (we used a 29 x 10 cm dish here) & line it with parchment paper. Pour the cake batter into the tin & garnish the loaf with the reserved crumbled feta cheese. Bake for 50 min at 180°C.
Step 7
Once the loaf is golden, plant the tip of a knife into the center of the loaf. If it comes out clean, the loaf is ready, otherwise, bake it for another 2-3 min. Enjoy the Spinach & Feta Loaf with a green salad !
For a truly flavoursome dish, we suggest adding some 'herbes de Provence', walnuts or diced ham into the loaf mixture.
