Zucchini

Step 1

Preheat the oven to 200°C. Cut the zucchini in half lengthwise and using a knife, score the flesh in a crisscross pattern.

Lime
Soy sauce
Maple syrup
Mild chile powder, ground (Espelette)

Step 2

In a bowl, mix together the maple syrup, soy sauce, chili pepper and lime zest.

Step 3

Place the zucchini skin side down on a baking sheet and pour the sauce over each one, allowing it to penetrate into the score marks. Bake at 200°C for 20 minutes.

Cilantro (fresh)

Step 4

While the zucchini are in the oven, chop the shallot and cilantro.

To serve, sprinkle the zucchini with the chopped shallot and cilantro. (Optional: add some extra lime zest for a flavor boost) Let's eat!
