Step 1
If needed, thaw the shrimp. Wash & slice the cherry tomatoes in half.
Step 2
In a hot pan, add the bacon strips & cook fort 2 min on each side, over high heat, until golden & crisp. Set aside on a paper towel-lined plate.
Step 3
In the same pan, add the shrimp & chilli. Sauté for 2 min.
Step 4
In a salad bowl, combine : the cherry tomatoes, chopped bacon drained & rinsed beans & shrimp.
Step 5
Prepare the vinaigrette. In a bowl, combine : the red wine vinegar & 1 tablespoon of olive oil per serving. Season with salt & pepper.
Step 6
Drizzle the vinaigrette over the salad & top with fresh basil, if you have some. Re-season to taste & enjoy !
