Step 1
If needed, defrost your salmon. Prepare the marinade: combine the honey, hot sauce, lemon zest and juice. Season with salt and pepper.
Step 2
Place the salmon in the marinade and baste the salmon. Set aside for 3 minutes.

Meanwhile, heat a pot of boiling salted water and cook the rice according to package directions (about 10 minutes).
Step 4
Heat a pan over low heat with a drizzle of olive oil and place the salmon skin side down. Keep the marinade. Let it cook for 3 minutes. Turn it over and cook for 2 minutes on each side.
Step 5
Before the end of the cooking, pour the marinade into the pan. Let the sauce thicken for 1 to 2 minutes and drizzle over the salmon.
Step 6
Drain the rice.
Step 7
Place the rice on a plate, add the salmon, a wedge of lime if you have any left, and a few sprigs of coriander. Re-season to taste, pour in the rest of the sauce and you're ready to go!
