Stovetop, Pot (small)
Step 1
Boil a pot of water. In a bowl, mix : the couscous with salt, pepper, a drizzle of olive oil & the harissa paste. Pour the same volume of couscous in boiling water. Cover & leave to soak for 5 min. Fluff the couscous with a fork & set aside.
Step 2
Meanwhile, prepare the vinaigrette. In a bowl, mix : the red wine vinegar & 1 tablespoon of olive oil per person. Season with salt & pepper.
Step 3
Wash & finely chop the mint.
Step 4
