A spicy soup made using chilli oil, because a little bit of spice doesn't hurt anyone!

Step 1
Thinly slice the garlic. Add 1 tablespoon of vegetable oil per person to a large pot. Add the garlic and cook for 4 minutes.
Step 2
Meanwhile, mince the onions.
Step 3
Stop the heat. Add the oil and chilli to a bowl and set aside.
Step 4
In the same pot, cook the onions for 1 minute before adding 1.5 cup of water per person, the chicken stock, rice and chicken. Cover and cook for 15 minutes.
Step 5
Remove the chicken from the soup and shred it with two forks. Add the spinach and shredded chicken to the soup, and season.
Step 6
Serve the soup, adding a splash of chilli oil. Optional: add some parsley leaves if you have any. It's ready !
