A spicy soup made with chili oil, because a little spice is always a good idea!

Make sure you have...
Stovetop, Pot (small)

Step 1
Peel, then thinly slice the garlic.
Step 2
Heat a drizzle of olive oil in a pan over medium heat. Add the garlic and sauté for a minute, until lightly golden. Set aside in a bowl.

Step 3
Meanwhile, peel, then thinly dice the onions.

Step 4
Prepare the chili oil. In a bowl, combine : the garlic oil & 'piment d'Espelette'. Season with salt & pepper.
Step 5
In the same pot, add the onions. Sauté for 2-3 min, on medium heat.



Step 6
Add 350 ml of water per person, the stock cube, chicken & rice*. Mix to dissolve the stock. Cover & continue cooking for 15 minutes on medium heat. *Check out our tips for this step
Step 7
After 15 min, remove the chicken from the pot & shred it using two forks.

Step 8
Add the shredded chicken back to the soup with the spinach. Season with salt & pepper and simmer for 1 minute.
Step 9
Serve the chicken & rice soup in a bowl. Top with a drizzle of garlic & chili oil. Enjoy !

For a truly flavoursome dish, we suggest adding grated ginger & fresh coriander to the soup.
