A spicy soup made with chili oil, because a little spice is always a good idea!
Stovetop, Pot (small)
Step 1
Thinly slice the garlic.
Step 2
In a pot, add 1 tablespoon of vegetable oil per person and the garlic.
Step 3
Cook for 4 minutes, until the garlic is lightly brown.
Step 4
Meanwhile, chop the onions.
Step 5
Turn off the heat. Pour the oil and chili in a bowl and set aside.
Step 6
In the same pot, cook the onions for 1 minute.
Step 7
Add 1.5 cup of water per person, the chicken bouillon, rice and chicken.
Step 8
Cover and cook for 15 minutes.
Step 9
Remove the chicken from the soup and shred it using two forks.
Step 10
Add the shredded chicken back to the soup with the spinach. Season with salt & pepper and simmer for 1 minute.
Step 11
Serve the soup, adding a splash of chili oil.
Step 12
Optional: add some chopped parsley. Enjoy!
