Step 1
Peel & slice the carrots into thin rounds.
Step 2
Slice the ends of the leeks.* Slice them into thin rounds & place them in a colander. Rinse thoroughly, to remove all impurities. *Check out our tips for this step
Step 3
Clean & thinly slice the mushrooms.
Step 4
Cut the chicken into cubes.
Step 5
In the Cookeo bowl, add : the leeks, carrots, diced chicken & a drizzle of olive oil. Cook for 3 min on 'golden' mode.
Step 6
Add between 80-100ml of water per serving, the veal stock & mushrooms. Season with salt & pepper & stir to combine. Cook for 15 min on 'pressure cooker' mode.
Step 7
Meanwhile, in a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice.
Step 8
Once the chicken stew is ready, add the cream & stir to combine. Serve the chicken stew on a bed of fluffy rice. Re-season to taste & enjoy !
For a zero-waste dish, use the discarded leek stalks to make soup ! Rinse well & remove all damaged, dry & yellow parts before adding to your pot with the ingredients of your choosing.
