Ingredients

Utensils

Stovetop, Frying pan, Pot (small), Colander, Whisk

Pancetta (sliced)

Step 1

Roughly chop the pancetta and brown it in the pan. Leave to brown for 5 minutes and set aside.

Pasta (spaghetti)

Step 2

Meanwhile, in a pot of salted boiling water, cook the pasta according to package instructions.

Egg

Step 3

Separate the whites from the egg yolks, then beat the yolks.

Parmesan

Step 4

Take one small ladle of pasta cooking water & pour it into the egg yolks. Whisk to obtain a smooth mixture. Add the grated parmesan, salt, pepper & mix again.

Step 5

Pour the barely drained pasta into the pan with the pancetta. Mix in the egg/parmesan mixture. Serve everything on a plate with a little grated parmesan. It's ready !
