Stovetop, Frying pan, Pot (small)
Step 1
Roughly slice the pancetta.
Step 2
In a hot pan, add the pancette. Sauté for 5 min, then set aside
Step 3
Meanwhile, in a pot of salted boiling water, cook the pasta according to package instructions.
Step 4
Separate the whites from the egg yolks. Beat the yolks, with a fork.
Step 5
Once the pasta is cooked through reserve a small ladle of cooking water. Drain the pasta.
Step 6
Pour the reserved pasta water into the bowl with the egg yolks. Whisk until smooth. Add the grated parmesan. Season lightly with salt & pepper. Mix again.
Step 7
Add the pasta to the pan with the pancetta. Pour in the egg yolk mixture & stir to evenly combine.
Step 8
Serve the carbonara pasta in a plate. Top with extra grated parmesan & re-season to taste. Enjoy!
