Asparagus (fresh)

Step 1

Wash and peel the asparagus. Cook for 7 minutes in a pot of boiling salted water. Strain, cut in half lengthways and set to one side.

Egg

Step 2

Bring a pot of boiling salted water to the boil. Gently place the eggs in the pan using a spoon.

Step 3

Cooking times: boil for 3 minutes for a soft-boiled egg, 4 minutes for well-cooked and 5 minutes for a boiled egg.

Step 4

Remove the eggs and leave them to cool for a few minutes. Remove their heads using a knife. Salt and pepper. Serve with the asaragus.
